I like to dice it before roasting, though, so it gets nice and caramelized around the edges of each little piece. I use a large, very sharp cleaver and cut the squash in strips, then dice. <BR/><BR/>But really, you don't even have to use butternut; I've used zucchini and asparagus. How would it work to just roast it with the skin on and then include mashed squash inside? Obviously, it wouldn't be as fast, for one thing.
