As I mentioned in the last post, I'm not a fan of Taste of Colorado. Nothing against the food vendors; it's just the impossibility of navigating without someone bumping into you every 5 seconds, and the distinct possibility that someone will barf on your shoes.
But some intrepid cow-orkers did venture out, and brought back a dubious treat: a cream-cheese-stuffed jalapeño wrapped in bacon and served with ranch dressing. On a stick!
It was just wee bit too hot for me. I had one (small) bite, then grabbed for my latte, then ate the bacon and licked out the cheese, which was still plenty fiery. I can see this with a milder pepper, though. A whole poblano would be too big, but you could spread cheese on a slice and roll it up.

I went through a brief bacon-with-everything phase, including bacon with bacon. Those were good times.
